How We Got Here

So, there I was, your typical food obsessed millennial enjoying the simple pleasure of a decadent croissant when my husband decided to force me into a world of dietary restrictions. With a new diagnosis of Coronary Artery Disease, I was forced to embark on a culinary adventure that feels equal parts overwhelming and exciting. 

First off, let’s talk about the elephant in the room: dietary restrictions can suck.  Grocery shopping has turned into a game of squinting at labels like they hold the cure to my culinary dilemmas.  Not to mention having to walk by all the treats that supposedly I cannot have anymore due my choice of life partner. This adjustment has not been easy but we are navigating it one meal at a time. 

Despite the challenges, I am determined to make the most of this new way of cooking. I have been forced to explore new cuisines and ingredients that I would have never found before. Though there have been many failures in the kitchen trying to modify old dishes, there is nothing quite like the feeling of finding a dish that not only aligns with this new diet but is also tasty. 

So, let’s have a moment to mourn my croissants, roll up our sleeves, and tackle this new world that I have been forced into.
