Chili Crisp Soft Eggs with Yogurt (10-Minute High-Protein Meal)
This is Chili Crisp Soft Eggs with Yogurt — soft-boiled eggs nestled into a bowl of Greek yogurt, so the yolk runs straight into it and something magical happens that I cannot explain and refuse to question. High-protein, genuinely fast, and works whenever hunger shows up, which is honestly the best kind of recipe to have on hand.
If there’s a theme running through this site, it’s “healthy but not sad” — see also my Guilt-Free Greek Yogurt Pancakes if you want the sweet version of this same yogurt-forward logic. This one goes savory instead: avocado, chili crisp oil, garlic chips, sesame seeds, salt.
That’s it. That’s the whole thing.
Save this. You will want it tomorrow — whatever time that turns out to be.

Ingredients
- 1/2 Cup Non-Fat Greek Yogurt
- 2 Soft-Boiled Eggs
- 1/2 Avocado Thinly Sliced
- 1 Tsp Fried Garlic Chips
- 1 Tsp Chili Crisp Oil
- 1 Tsp Sesame Seeds
- Salt
Instructions
- Bring a small pot of water to a boil. Gently lower in the eggs and cook for 7 minutes for a soft, jammy yolk.
- While the eggs cook, transfer them to an ice bath or run under cold water once done, then peel carefully — soft-boiled eggs are delicate.
- Spoon the non-fat Greek yogurt into a bowl.
- Halve the peeled eggs and nestle them into the yogurt so the yolks stay exposed and ready to run.
- Arrange the avocado, thinly sliced alongside the eggs.
- Drizzle over the chili crisp oil, then scatter the fried garlic chips and sesame seeds, plus salt to taste on top. Serve immediately, while the yolk is still ready to run into the yogurt.
