Morning Blueberry Drops
Soft, chewy morning oatmeal drops are packed with juicy blueberries, hearty oats, sweet banana, applesauce, plump raisins, and a swirl of maple syrup — all brought together with creamy sunflower seed butter. Not quite a cookie, not quite a muffin but perfectly satisfying none the less. Great for the morning rush out the door. We won’t tell anyone if you sneak one for an afternoon pick-me-up either.
Ingredients
- 1 3/4 cup Rolled Oats
- 1/2 cup Flour
- 1 tsp Cinnamon
- 1 tsp Baking Powder
- 1/2 tsp Salt
- 1 cup Apple Sauce No Sugar Added
- 1/2 Banana
- 1/4 cup Maple Syrup
- 1/4 cup Sunflower Seed Butter
- 1 tsp Vanilla Extract
- 1/2 cup Blueberries Fresh or Frozen
- 1/3 cup Raisins
Instructions
- Preheat oven to 350°F. Line a large baking sheet with parchment paper.
- In a large mixing bowl, combine the rolled oats, flour, cinnamon, salt, and baking powder. Set aside.
- In a medium bowl, mash ½ of a ripe banana until smooth.
- Add the applesauce, maple syrup, sunflower seed butter, and vanilla to the mashed banana. Mix well until fully combined.
- Pour the wet ingredients into the bowl with the dry ingredients. Stir until just combined.
- Gently fold in the raisins and blueberries.
- Using a ¼-cup measuring scoop, portion the dough into about 12 mounds and place them on the prepared baking sheet.
- Bake for 20 minutes, or until the bottoms are lightly golden.
- Let cool before serving, enjoy!
