Salted Pistachio Date Cups

These Salted Pistachio Date Cups are what happens when you want a real dessert but your household has opinions about saturated fat. They have a no-bake oat and date base, a layer of homemade pistachio butter, a chocolate top, and enough flaky sea salt to make you feel like you did something intentional. No butter, no oil, no dairy — and genuinely, annoyingly good.

The dates and oats bind together into a chewy, caramel-like base without any added fat, the pistachio butter brings richness and that deep green color that makes everyone ask what’s in it, and the dark chocolate sets into a shell that snaps when you break it. Flaky salt is non-negotiable.

They come together in about 20 minutes of active time, then the fridge/freezer does the rest. Make a batch on Sunday and you’re set for the week — they keep beautifully frozen and taste even better straight from cold.

Ingredients
  

  • 1 cup Dates
  • 1 cup Rolled Oats
  • 3/4 cup Whole Pistachios
  • 3/4 cup Chocolate Chips
  • Flakey Sea Salt

Instructions
 

  • Soak dates in warm water for 10 minutes, then drain.
  • Add pistachios to a blender and blend for 3-5 minutes, scraping down the sides as needed, until a smooth butter forms. Set aside.
  • Add rolled oats and drained dates to a food processor. Blend until a sticky dough forms.
  • Scoop 1 Tbsp oat mixture into each cup of a silicone muffin tray. Press down firmly with your fingers until you have a flat, even base layer.
  • Add 1 Tsp pistachio butter to each cup and smooth into an even layer.
  • Melt the chocolate in a microwave in 10-second increments, stirring thoroughly between each interval, until fully melted.
  • Spoon 1 Tsp. melted chocolate over each cup and smooth into an even layer.
  • Finish each cup with a pinch of flaky sea salt.
  • Transfer to the freezer for 30 minutes or the fridge for 1 hour, until the chocolate is fully set.
  • Pop the cups out of the silicone tray and serve. Store leftovers in the fridge.
